Food ideas for Ace Camps

Searching the world for food this week while planning the menu for my upcoming Ace Camp in the Baja.

Raw Fig Newtons:

Crust: 1 cup almonds 1/2 cup walnuts 1 cup oats 1/2 cup dates, soaked 30 minutes 1/4 tsp pure vanilla dash of sea salt 1 tsp water (you might not need it, but I did)

Blend up the almonds, walnuts and oats together. Then add the dates, vanilla and sea salt (and water, if using).

Take the dough in your hands and press it together for a few minutes to form a ball. Lay it down between two pieces of wax paper or plastic wrap and roll it over with a rolling pin. Make as thin or thick as you like. It helps to roll the dough in a long rectangle shape for when you fold it.

Filling: 1 cup dried figs, soaked 30 minutes 1/4 cup fresh water 2 tsp cinnamon 1 tsp agave

Blend this up in a blender, then spread over half of the dough. Fold over one side using the wax paper or plastic wrap to help you, then seal the sides. Refrigerate this for at least an hour before cutting into it.

I am really liking vintage linens, etched glass and food served wrapped up in waxed paper or brown paper tied up with string...obviously this photo fits in. (This photo is by Nikole and was published in one of my favs - Kinfolk Magazine - was a collaborative project between the author of the blog Seven Spoons (Tara) and Nikole from Forty-Sixth at Grace.
These granola bars from Anja's Food 4 Thought look good for breakfast or quick snacks at the beach.
